This raw vegan snickers slice by wholefoodie Tess Mol of @tttesselate will not only nourish you deeply, but goes down a treat with the little ones, work colleagues and extended family members. If you want to trick your loved ones into eating something healthy this festive season, this treat is the way to go. This slice requires a little bit of forward thinking in the form of soaking and preparing the night before, and once you’ve put all the ingredients you’ll have to allow this tasty morsel to set in the freezer overnight. Sorrrrry, but we promise it’s worth it!

Ingredients:

Base:
1 cup of almonds
1 cup peanuts
1/2 cup of dates
1/3 cup coconut oil

Nougat:
1 cup soaked cashews
1/3 cup coconut oil
1/3 cup maple syrup
1 tsp. vanilla essence

Caramel:
1 cup dates
2 tbsp. maple syrup
1/3 cup tahini
3 tbsp. natural peanut butter
2 tbsp. coconut oil
1 tsp. sea salt

Chocolate:
1/2 cup raw cacao powder
3 tbsp. coconut oil

Method:

  1. Cover dates and cashews separately in boiling water to soften down. Allow to soak overnight.
  2. Place aside a deep lined baking tray.
  3. Using a food processor, blend base ingredients together. Layer in baking tray.
  4. Rinse out food processor and then blend nougat ingredients together. Layer on top of the base in baking tray.
  5. Rinse out food processor and blend caramel ingredients together. Layer on top of nougat in baking tray.
  6. For the chocolate layer, melt coconut oil over the stove or in a microwave.
  7. Whisk in raw cacao powder and pour over nougat layer.
  8. Place in the freezer overnight to harden.
  9. Slice and enjoy!
