Recipe: Broccoli & smashed pea soup with crackers

Method

Need to sneak in some  greens? Gather up your broccoli and peas and whizz this delish soup together…

SERVES 2 

INGREDIENTS

1 head of broccoli (approx. 400g), roughly chopped
1 cup frozen peas
Salt and pepper, to taste
Extra virgin olive oil, to taste
Continental parsley, roughly chopped
Carman’s Super Seed & Grain Crackers, to serve

Method

1 Place the broccoli in a medium saucepan and fill with water until the broccoli is almost covered. Add two good pinches of salt and bring to the boil.
2 Once the water has boiled, reduce the heat and simmer with the lid on for 6-8 minutes or until the broccoli stems are soft. Remove the broccoli from the saucepan, ensuring you keep the water.
3 Bring the broccoli water to the boil and then add the frozen peas.
4 Bring back to the boil, then reduce heat and simmer for approx. 1 minute or until tender.
5 Strain the peas and keep the liquid.
6 Place the cooked broccoli and peas in a blender.
7 Add enough of the reserved liquid (approx. 1½ cups) to create a delicious thick soup. Season with salt and pepper to taste.
8 Pour soup into bowls, drizzle with extra virgin olive oil and top with roughly chopped parsley. Serve with a handful of Carman’s Super Seed & Grain Crackers.
