Mr Perkins, a new soup shop in Sydney’s Bondi, is revitalising our love for chilled summer soups made fresh produce. So when you want to cool down after a scorcher of a day at the beach, you’ll definitely want to make a pitstop here. Mr Perkins also do broths, salads and smoothies, but we just can’t go past their gluten-free chilled tomato soup (with a entire popsicle of parmesan cheese!!). Learn how to make it DIY with their recipe below:


Serves 4

For soup:
1kg fresh tomatoes
70g extra virgin olive oil
12g salt (Maldon)
Fresh basil (to garnish)

For parmesan popsicle
50g Grana Padano (grated)
60ml milk (Full Cream)
55ml thickened cream
Popsicle moulds

For soup

  1. Wash tomatoes and cut into quarters.
  2. Put tomatoes and salt into a food processor and blend until smooth.
  3. Add the oil in three additions and mix until combined.
  4. Set aside to cool.

For parmesan popsicle

  1. Place milk and cream into a saucepan and heat over medium heat to 70°C.
  2. Remove from the heat and stir though parmesan until melted and combined.
  3. Pour mix into popsicle moulds and freeze.
  4. Once set remove from freezer and serve with chilled tomato soup and garnish with fresh basil.
